Happy Heart Macaroni
Ingredients:
1 tablespoon olive oil
2 garlic cloves, crushed
1 cup chopped tomato
2 tablespoons chopped fresh or 2 teaspoons dried parsley
1 tablespoon chopped fresh or 1 teaspoon dried basil
2 teaspoons honey
1/4 teaspoon salt
1/8 teaspoon black pepper
2 cups cooked elbow macaroni (about 4 ounces uncooked)
1/2 cup canned black beans, rinsed and drained
2 cups chopped fresh spinach
Instructions:
Heat oil in a large nonstick
skillet over medium heat until hot. Add garlic; saute 1 minute.
Add tomato and next 5 ingredients (tomato through pepper), and
saute 3 minutes. Add macaroni, beans, and spinach; cook 1 minute
or until thoroughly heated. Yield: 2 servings (serving size: 1-1/2
cups).
