Asparagus-Tomato Pasta Salad
Ingredients:
1/4 cup of olive oil
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cloves garlic
1 pound elbow macaroni, cooked al dente
2 medium tomatoes, coarsely chopped
1 small cucumber, peeled, halved lengthwise, seeded and cut
crosswise into 1/4 inch strips
1 small red onion, chopped
1 8-ounce can mushroom stems and pieces, drained
1 bunch fresh asparagus, steamed 2-3 minutes and cut diagonally
into 1 1/2 inch pieces
Instructions:
In a jar with cover, combine olive
oil, lemon juice, salt, pepper and garlic. In a large salad bowl,
toss pasta with dressing. Add remaining ingredients and toss
again. Serve hot or cold. Serving suggestion: A good side dish
with hamburgers, chicken burgers or grilled poultry or seafood.
